Pear Salad with Maple Glazed Nuts

Maple Glazed Nuts
1 heaping cup walnuts or pecans, chopped
2 tsp olive, safflower, or coconut oil
2 tsp maple syrup
1 Tbsp coconut or cane sugar
1 pinch sea salt
1 pinch ground cinnamon
1 pinch cayenne (optional)

1/4 balsamic vinegar
1/4 cup extra virgin olive oil
1 medium shallot, minced
1 pinch sea salt
1 pinch black pepper

4 cups mixed spring (or baby) greens
1 Bosc or Bartlett pear, sliced
1/4 cup dried cherries (or cranberries)


Maple Glazed Nuts: Preheat oven to 350 F. Place nuts on a parchment-lined baking sheet and toast for 7 minutes. Remove from oven and add remaining ingredients directly to the nuts (oil, maple syrup, sugar, salt, cinnamon, and cayenne if desired) and toss with a spatula or spoon until thoroughly combined. Place back in oven and roast for another 4-6 minutes or until fragrant and golden brown. Set aside to cool.

Dressing: Place all the ingredients in a jar (or mixing bowl) and shake (or whisk) to combine thoroughly. Taste and adjust flavor to taste: adding more balsamic for acidity, olive oil for creaminess, or salt/pepper to balance flavor.

Salad: Place greens, sliced pear, glazed nuts, and dried cherries into a large bowl, drizzle with dressing, and toss lightly. Serve & enjoy!
