As the light slowly comes back in the evenings and we experience the occasional day of warm spring weather, you might find yourself eager to spend as much time as possible outdoors. I find myself getting lost in gardening, hiking, and running, and spending less and less time in the kitchen. Conversely, the kitchen is one of my favorite places to be in the winter – cooking makes it warm and makes the house smell great! The good news is that quick and delicious recipes save the dinner hour from ruin (or pizza delivery) so we can all soak up as much sun as possible.
The next time you want to stay outside and savor that early spring air just a little longer, try this Mediterranean Orzo Pasta recipe. This pasta salad delivers a full flavor profile with the inclusion of feta cheese, kalamata olives, and a balsamic vinaigrette dressing all of which perfectly compliment the orzo and veggies. You can even make this recipe ahead of time, so a satisfying meal awaits you when you’re done having fun.
Come by the co-op, grab the Mediterranean Orzo Pasta recipe card from our recipe collection, and pick up all the ingredients you need to whip up this easy meal. Now you have extra time to spend outdoors!
