Easy and Satisfying Mediterranean Orzo Pasta

As the light slowly comes back in the evenings and we experience the occasional day of warm spring weather, you might find yourself eager to spend as much time as possible outdoors. I find myself getting lost in gardening, hiking, and running, and spending less and less time in the kitchen. Conversely, the kitchen is one of my favorite places to be in the winter – cooking makes it warm and makes the house smell great! The good news is that quick and delicious recipes save the dinner hour from ruin (or pizza delivery) so we can all soak up as much sun as possible.
